Who is "Sheik?"
"Sheik" is a fictitious male persona created by Princess Zelda, which she uses as a disguise to hide from the evil king Ganondorf after he took over her kingdom of Hyrule.
Zelda chose to disguise herself as a young Sheikah boy (a member of the elusive Sheikah ninja clan) and crafted a personality, backstory, and physical appearance to go with it. She also trained in the Sheikah ninja arts to make her disguise more convincing.
"Sheik" is a cosmetic disguise; Zelda's physical and magical abilities do not change depending on whether she is in or out of disguise. The costume she wears as Sheik is designed to hide the feminine features of her body and make her appear masculine. (YMMV on how well you think this works.) Zelda uses magic to make her skin more tan in color and her eyes red to complete the look.

Princess Zelda is a cis female who uses feminine pronouns. When in disguise as Sheik, Zelda pretends to be a cis male and uses male pronouns. Zelda does not consider herself or Sheik to be trans.
In roleplaying, I use feminine pronouns when describing Zelda and male pronouns when describing Sheik.
